For Food & Beverage Director Jesse Filkins, his culinary-focused cocktail program and close working relationship with the culinary team has led to cocktails that explore Porto’s emphasis on the sea and live-fire cooking. “Our culinary cocktails combine our favorite seasonal elements and spirits with unexpected ingredients and flavor combinations — from squid ink and seaweed to smoke,” says Filkins. In addition to Filkin’s innovative cocktail program, the beverage menu features more than 35 selections of sherry, imported beers and no-proof cocktails.
